What is HACCP?

HACCP (Hazard Analysis and Critical Control Points) is an internationally recognised, systematic approach to identifying, evaluating and controlling food safety hazards — biological, chemical and physical. Rather than relying on end-product testing, it prevents problems before they happen.

Defined by the Codex Alimentarius and built on 7 principles, a HACCP-based food safety management system is a legal requirement for food businesses across the UK and EU, and it forms the backbone of every major certification standard, including BRCGS, IFS and FSSC 22000.
